Capellini Pomodoro

One of the quickest and most flavorful dinner I can make on a weeknight is Capellini Pomodoro. I first had it at Macaroni Grill and fell in love, and then I discovered that my boyfriend had made it for himself before he met me. Well that last tid bit annoyed me so I set out to make the dish myself!!!!!!!!! There is really no way you can mess up the recipe, it's almost as easy as spaghetti. I actually think its even easier and I prefer it over spaghetti because it has sooooooooo much more flavor. The tomatoes burst with sweetness and compliment the basil and garlic so well. I can't think of a more easier delicious dinner than this.







You will need:

3 Garlic cloves minced

2 lbs (2 packages) plum tomatoes

6-7 fresh basil leaves rolled up like a cigarette  and chopped

1/4 cup of olive oil

1 tsp ground pepper

1/2 tsp of red pepper flakes

3/4 cups of grated Parmesan cheese.

1 package of Angel hair pasta.

Follow directions on the Angel Hair pasta box and cook as instructed.

While the pasta is cooking, in a separate pan heat olive oil and garlic for a min until garlic turns white and is fragrant.

Add the tomatoes and basil and cook for 10-13 min or until the tomatoes are squishy  but have not lost their shape. You will start to notice a red sauce building up from the tomato juices.

Once the tomatoes become soft and squishy, add pepper and red pepper flakes and stir.

Toss tomatoes with Angel hair pasta and grate Parmesan cheese over top!

This serves 2 people perfectly!! Add a side of garlic bread and you have yourself a divine dinner!
